Friday Feast - Prairie Dogs

A great man once said, “There are no two finer words in the English language than 'encased meats', my friend”. That great man would me none other than the visionary who did for hot dogs what Steve Jobs did for the computer, Mr. Doug Sohn. The reason I bring this up is because we have a sausage factory that has opened on Lake St. in Minneapolis that has been one of the most anticipated openings of the year. They offer encased treats the likes of which our wonderful state has never seen. Fairness in conversation, I have been to Mr. Sohns place, located in Chicago but now closed, about 5 times. He is a genius and I have often wondered if he and I should get an apartment together. It goes without saying, that I have high hopes for the establishment.


Spicy Merguez-Lamb sausage, piquillo peppers, feta, mint aioli

Some very strong flavor here. The mint and feta dominate the delicious lamb. Bun was dry and little big for the 2 thin lamb tubes. Love the piquillo peppers as they give it a smokiness. Not a bad start. 3.5 out of 5 forks.

Backyard Brat-Pork Sausage, bacon sauerkraut, grilled onion, house brown mustard

I love a good backyard. Bacon sauerkraut and grilled onions were fabulous but the brat lacked snap so the whole thing came off as mushy. Good flavors but need to crisp up the brat or add crispy onion strings. 3 out of  5 forks.

The Pig Easy-Hot Boudin (Cajun Pork sausage), pickled peppers, cracklins, blue cheese

I love blue cheese but didn't think it fit on the sausage. Maybe a sharp cheddar, a head cheese or one with some smoke or spice. The rest was great. 3.5 out of 5 forks.

Pliny The Elder-Duck fat fried dog, foie gras torchon, currant apple relish

Savory , sweet, and salty. I would be careful with the relish because it could get too sweet and take over the fabulous foie. Creamy and rich. Very good dog, but again not crazy about the bun. 4 out of 5 forks.

Micho’s Sonoran Dog-Bacon wrapped and grilled, cilantro aioli, bean spread, avocado, cotija, onion, tomato, salsa verde

Right away I was disappointed because they just slapped everything into a traditional bun. IT needs to be a roll, a warm roll at that. Also, my favorite versions always have chorizo which would have added some heat, warmth and spice, to all the cold toppings. I only took one bite, poor execution. 2.5 out of 5 forks

The All-American-Crispy pork belly, morning potatoes, sunny egg, Sriracha aioli, cilantro

Loved this dog. Everything went perfectly together. Runny egg was cooked perfectly. I would only add that I would make sure the potatoes are crispy and didn't taste the Sriracha very much. I will be back for this dog alone. 4.5 out of 5 forks

Bahn Mi Joy Dog-Char siu pork, chicken liver pate, pickled carrot & daikon, jalapeno, shoyu mayo, cilantro

I think that need to offer double meat or cut down on the bread. The bread choice was great but there was too much of it. The ingredients were fresh and the pork was tasty but I tasted mostly bread and veggies. 3 out of 5 forks

 They had some good dogs and some not so good ones. I will be back, especially when they have their liquor license. I think with a few tweaks this place could be exceptional but they were lazy with a couple dogs. I consistently did not like the buns and bread. Hot dogs buns should be like the CIA, when you do your job, nobody knows it. I am not supposed to be talking about the bun. They were either too big or dry. I will probably be back a few times just to be thorough.
